I absolutely love the summer months and especially grilling. How could you not love a dish that looks like a kaleidoscope of colors and textures?
The best part about making this dish is that I put whatever I have in the house in it. I particularly like zucchini, peppers, onions, mushrooms and a new addition bok choy. Growing up my mom made stir fry with bok choy but I never thought of putting it in the grill basket. Believe me, it is delicious and super nutritious!
Before grilling I season with salt and pepper. I coat with a good quality oil like Avocado/Coconut Oil and balsamic vinegar (not too much, just enough for flavor).
