When I go to the Poultry Store, I usually pick up a Rotisserie chicken for dinner that night. This is what I do with my leftover chicken. It's the easiest way to make the most of the whole chicken. Whether you end up using it for stock or a chicken soup follow these steps and you are all set for a yummy treat!

  • Prep: 30 mins
  • Cook: 7 hrs

Ingredients

Left Over Chicken

1 Whole Onion

3-4 Carrots

3-4 Celery Stalks

2 Potatoes

1 Parsnip

2 Vegetable bouillon cubes

6 cups Water

1 count Dill and/or parsley sprig

Directions

1Add Leftover Chicken to Crockpot

2Add Vegetables (those listed under ingredients can pretty much be substituted with any root vegetable in your fridge)

3Add Water to Cover

4Add Vegetable Boullion

5Add Herbs to Taste (such as parsley or dill)

6Add Salt and Pepper to Taste

7Cook on Low for 6-8 Hours! Then Enjoy!

You may need to Add more water to cover all ingredients before cooking.
